Illetschko's Meats and Smokehouse is a local family owned and operated business. We opened our doors to the public in July of 2008, but have a long history of meat processing within our family. Our grandfather Joseph Illetschko was a meat cutter for Armour and Company in South St. Paul, Minnesota for fourteen years. Our uncle Bob and Denny were trained at the South St. Paul Sausage School.

As avid sportsmen, the meat processing trade has come in handy. While growing up, our chief butcher Mike Illetschko, took an immediate interest in the trade while helping process venison. Uncle Bob and Denny were more than happy to show the nephews the ropes and ever since we have been processing our own venison.

After years of venison processing, Mike Illetschko decided to pursue a career in meat processing. He attended Dakota County Technical College meat processing program and graduated in the late nineties. After graduation, Mike worked for Fidor's Market and Frez-R-Pak as a butcher. Mike is now the chief butcher and the creative energy behind our meat and custom sausage products. Stop in and try his snack sticks, pizza brats, potato sausage, or hot pepper cheese summer sausage.
